Baingan bharta is a traditional North Indian dish celebrated for its deep, smoky flavor and rustic preparation. Baingan means eggplant, and bharta refers to vegetables that are roasted, mashed, and cooked with spices—a method rooted in village-style cooking across India.

Whole eggplants are traditionally roasted over an open flame or in a tandoor until the skin is charred and the flesh becomes soft and smoky. The roasted eggplant is then mashed and cooked with onions, tomatoes, garlic, ginger, and warming spices, creating a dish that is rich, savory, and layered with natural smokiness.
