Caesar Salad

The Caesar salad was created in 1924 by Caesar Cardini, an Italian-American restaurateur working in Tijuana. According to popular accounts, the salad was born out of necessity during a busy holiday weekend when Cardini improvised a dish using simple ingredients he had on hand—romaine lettuce, eggs, olive oil, garlic, cheese, and bread.

Originally prepared tableside, the salad emphasized freshness, drama, and bold flavor. The classic dressing relied on emulsified egg and olive oil for richness, with garlic, lemon, Worcestershire sauce, and Parmesan creating its signature savory depth. Contrary to common belief, the original Caesar salad did not include anchovies—the umami flavor came from Worcestershire sauce.

Over time, the Caesar salad became a global staple, evolving with additions like anchovies, grilled chicken, or shrimp, while remaining a symbol of simple ingredients elevated through technique. Today, it stands as one of the most recognizable and enduring salads in modern dining.
