Thin slices of seasoned gyro meat — made from ground beef and lamb, blended with Mediterranean spices, formed into a loaf, and slowly roasted on a vertical spit — are shaved to order and wrapped in warm pita bread. Finished with crisp lettuce, fresh tomatoes, sliced onions, and cool, creamy tzatziki sauce, this classic Greek wrap is savory, comforting, and full of authentic flavor.

The gyro is one of the most iconic dishes in Greek cuisine. The modern gyro took shape in Greece in the early 20th century, influenced by older methods of vertical spit–roasted meats that spread across the Eastern Mediterranean and Middle East. Greek cooks adapted this technique using local seasonings and serving styles, creating what we now recognize as the gyro. Traditionally, gyro meat was made from whatever was available at the time in Greece (lamb, chicken and pork were common), seasoned with garlic, oregano, salt, pepper, and other Mediterranean spices. The meat was stacked or formed into a large cone, slowly roasted as it turned, and shaved thin as the outside crisped—ensuring juicy meat with a lightly charred edge.

Gyros became especially popular as street food, valued for being quick, affordable, and deeply satisfying. When Greek immigrants brought the gyro to the United States in the mid-20th century, it evolved further. Beef-and-lamb blends became more common, and the dish spread nationwide — eventually becoming one of the most recognizable Mediterranean foods in the world.
